ORGANIC INGREDIENTS

The ingredients used to prepare dishes come from the local farm, for at least 90%. It received the organic certificationsymbol of the products authenticity and of the great care for the guests’ health.

Some examples:

  • The spelt is one of the most oldest cereals, already known during the Neolithic. Thanks to its properties, it is a cereal very adapted for organic farming. Spelt has a higher protein content than other types of wheats; it is rich in vitamins and mineral salts such as potassium, magnesium and selenium, where the latter is particular useful to counter free radicals. The wholemeal type, much used in the farm stay, is rich in fibers, that improve the intestinal transit and protect the digestive system.
  • Solina wheat is a variety of soft wheat, native to Abruzzo, cultivated from the 16th century. It is ideal for mountain cultivation, thanks to its natural resistance to cold and rigid weather, very suitable for organic farming. It It contains a minor quantity of gluten and a higher protein concentration in comparison with other types of soft wheats.
  • Fruit and vegetables in season are ingredients essential for the health and are directly collected in the organic gardens of the farm.
